Mid-Week Meals I’m Making on Repeat

There’s something about cooking a meal from scratch that’s so satisfying but with a busy 9-5 it can be hard to find the time. It doesn’t have to be a chore though, arrange a flatmate night/date night/invite a pal over to share, so you get the added perk of some quality time with those you love (and maybe someone to help with the washing up!). Cooking something delicious together is 100% my love language. If you’re looking for inspiration, or just a more exciting answer when someone asks you ‘What’s for tea?’ here are five of my favourite, simple mid-week meals that I’ve been making on repeat.

Teryaki Salmon Bowl

If I’m looking for something quick and easy to eat post-run, teryaki salmon is my go to. Packed full of protein and easy to serve with veg, rice or noodles. I usually go for tenderstem broccoli and pak choi but roasted peppers, mangetout or pretty much anything you’ve got to hand will work well!

Ratatouille

Mob Kitchen’s Ratatouille is a vegetarian crowd pleaser with delicious salty halloumi to top it off (or make it vegan by cutting the cheese). Admittedly, this one does take a bit more time than the others but it’s so worth it and once you’ve got it all in the pan you can leave it to do its thing!

Tray Bake Roast

This tray bake roast chicken is a delicious way to pack in your veggies and ingredients can be easily substituted for whatever you’ve got in the fridge. Chop and prep your veg, then chuck it all in the roasting tray with the chicken and stock to cook. The perfect meal for a date night for two or catching up with friends as it’s low effort but delicious and looks impressive!

Chicken Chow Mein

For a Friday night takeaway fix on a budget, try this chicken chow mein recipe. Ready in just twenty minutes, a deliciously simple way to round the week off.
