An empty biscuit tin is practically unheard of in my house. The perfect mid-morning, or any time of day really, snack. So, I thought I’d share with you my easy go-to cookie recipe. Friends who have tried them have said they taste like Millie’s cookies so if you’re into that, you’ll love these.
Ingredients:
- 125g unsalted butter
- 100g light brown soft sugar
- 125g caster sugar
- 225g self-raising flour
- 1 tsp vanilla extract
- 150-200g cooking chocolate
- 1 egg
Method:
- Preheat the oven to 180 (conventional). Line a tray or two with baking paper – no need to grease.
- Chop your chocolate into chunks. I usually use white cooking chocolate and quarter each square but you could also use chocolate chips.
- Cream the butter and the sugars. Once combined, add in the egg and vanilla extract and mix until smooth.
- Sift in your flour and your chocolate. Resist temptation to eat all of the dough!
- Roll into balls roughly the size of a walnut – no need to be exact. Although, you could also roll your dough into one long sausage and cut it into even pieces if you want to be neater.
- Space the cookies well on top of the baking paper, you want to give them plenty of room to spread. Cook for 7 minutes if you want them to be soft in the middle, or approximately 10 minutes, until golden brown all over, for a crispier cookie.
- Leave to cool and firm up for a minute or two and then transfer onto a wire cooling rack. Enjoy – these are delicious fresh from the oven but are also great dunked in a cuppa.
